Purses for Rachel and Faith

I am trying to teach myself how to sew by doing little projects here and there. Here are a couple purses that I have made. One for Rachel and one for Faith, Mike's daughter. I think she loves it since I have seen her with it the last 2 times I've seen her.



So here is the one I made for Rachel.

First Diaper Cake!

So my friend Brandy Jo was having a baby shower. I decided to do a diaper cake for her. I have never done one before. I had Manda come over and help teach me how to do one. I had a blast making my very first diaper cake.

SO Finally I decided what to do!

OK, so I finally decided what to for school. I had wanted to go to Ultrasound school for the longest time, but here in Arizona we have to obtain a degree in X-Ray before ultrasound. The waiting lists are forever long, and it was going to take another four years to be able to do Ultrasounds. I have decided to go for my Master's degree. I am going to get my Master's in Career and Technical Education. I will then be able to be a college instructor if I choose to. It is always coming back to that teaching thing!

Where has this month gone

It just seems like things are flying by. The last week in May I had a wonderful trip to Kansas to see a friend. I ended up doing a road trip and had a blast. It had been a while since I had last done a road trip, at least a long road trip. The weather was good and the company was great.

Then having cousins that have been living out of state coming in town for a visit it has been a lot of fun. Holly, Craig, Deanna, Shanna and Shane and of course all the kids. It has been nice to catch up with everyone and just enjoy haning out and having fun.

New Craft Room

I am so excited. I have talked about this for a while, but I actually got it done. I have converted my living room into my craft room. This is great. I now have a lot more room for my crafts stuff and I am able to start getting a lot more projects done. I was just so excited I had to post.

Recipes

Some of you have asked for a couple of recipes, so I have posted a couple of them here, if you have any questions just call or e-mail me.

Broccoli Chicken Divan

1 lb. Chopped Fresh Broccoli 1/3 cup Soy Milk
1 ½ cups Cubed, Cooked Chicken ½ cup Shredded Cheddar Cheese
1 (10.75oz) Can Cream of Broccoli Soup
2 Tab. Dried Bread Crumbs Your Favorite Seasonings

Directions:

Preheat oven to 450º. Place the broccoli in a saucepan with enough water to cover. Bring to a boil, and cook 5 min. Place the cooked broccoli in a 9inch pie plate. Top with the chicken. In a bowl, mix the soup, seasonings and milk, and pour over the chicken. Sprinkle with cheese. Sprinkle bread crumbs over cheese. Bake for 15 min.

Makes 6 servings. 186 calories, 9.5g fat, 10g carbs, 15.7g protein.


Angel’s Pasta

8oz Angel Hair Wheat Pasta 1 Tab. Crushed Garlic
1 Tab. Olive Oil 2 Zucchini, Sliced
2 Tomatoes, Chopped 4 oz Shredded Mozzarella Cheese
Your Favorite Seasonings

Directions:

Cook pasta as normal. In a skillet, heat oil and sauté garlic until golden brown. Stir in Zucchini, and seasonings. Saute 3 minutes, then mix in tomato and cook a few minutes more. Combine pasta and vegetables and top with cheese.

Makes 6 servings. 201 Calories, 6.6g fat, 26.9 carbs, 10.1g protein.


Spinach Chicken Parmesan

1/3 cup Grated Parmesan Cheese 1 Tab. Wheat Flour
¼ tea. Italian Seasoning ½ cup Soy Milk
1 Tab. Butter 3 Boneless, Skinless Chicken Breasts
1 Tab. Chopped Pimentos ½ (10oz) Frozen, Chopped, Thawed Spinach
Your Favorite Seasonings

Directions:

Preheat oven to 350º. In a bowl combine cheese and seasonings. Roll chicken pieces in cheese mixture to coat lightly. Set remaining cheese mixture aside. Arrange coated chicken pieces in an 8X8X2 inch baking dish. In a small saucepan, melt butter, stir in flour and milk. Simmer, stirring, until bubbly. Stir in drained spinach and pimiento and mix together. Spoon spinach mixture over chicken and sprinkle with remaining cheese mixture. Bake uncovered for 35 minutes.

Makes 6 servings. 127 Calories, 4.5g Fat, 3.6g Carbs, 17.6g Protein.


Nadine’s Fajitas

1 Zucchini, Sliced 1 Summer Squash, Sliced
1 cup Sliced Mushrooms 2 Chicken Breasts, Sliced
½ Bell Pepper, Sliced 1 tea. Garlic
2 oz Diced Green Chilies Your Favorite Seasonings
Wheat Tortilla Fat Free Sour Cream (Optional)
1 Tab. Olive Oil 1 Tomato, Diced.

Directions: In a skillet, add olive oil and cook Chicken, add in garlic, seasonings, and vegetables except tomato. Add green chilies and cook until vegetables are tender. Put into wheat tortilla, top with sour cream and tomatoes.

Somebunny Loves You

When I went and visited Shanna in January, she talked me into signing up for a class called "A year in cards". This has been a fun class. The project that we just did had us focusing on using ribbon with our card. Here is mine. I had a lot of fun with it.

Changes, Changes, Changes.

So, I have always been a little psycho, and I have been the type that just always goes, goes, goes. Fortunately or unfortunately it usually is work or school that I am continually pushing myself to complete, and the things that I want to do have to come in last.

So about three weeks ago, I made the decision to start doing things that I enjoy, I'm 34, it is about time. So I have decided not to go to X-Ray school. I have decided to start hiking more, so if anyone wants to join me on the hiking thing, just let me know; I love having company. I have decided I'm going to start taking time to do my fun projects that I have just kept building up. And many more things.

It is amazing how much of a happier person I am, not that I was unhappy before, but it is a little liberating to do things that I am enjoying doing, and not things that I feel I have to do.

Girl's Day

OK, these pictures are just a little late, but a couple weeks ago, Rachel, Manda, Tami, Lucy and I went out for a girls day. We all went and relaxed and got pedicures. And then we went to Abuelo’s for lunch. Yummm. We had a ton of fun. I love “girls days”

I was holding Zane when Tami went and got it cut, and he was so cute watching all of her hair falling on the ground. When I said, Zane where’s mommy’s hair, he was so cute and just pointed to the floor with big eyes!

31 Pounds Lost and many more to go....

So, a few of you know that for the last 9 weeks, I have been trying to change my way of eating and I have been working out quite a bit. I have been horizontally challenged for most of my life, LOL so I am trying to correct that problem. Like many of us, I am trying to lose some weight. I have now lost 31 pounds Yeah!!!!! I will try and post a pic in the next couple of days, and I will hopefully keep the update going!

Happy Birthday Lunch

Lucy and I have been friends for over twenty years. It is amazing that she has put up with me this long; I think I would have given up on me 15 years ago. LOL. Anyways, we always get together around each of our birthdays for a special lunch. It is so much fun. Tami, Lucy and myself, and Maddie and Zane went to Red Lobster...yeah one of my favorite places to go. The kids had a great time too. Isn't this picture a cute one?

So my sister Manda has been bugging me to do a post. She has been telling me why have a blog if you are not going to post, and I have been telling her that I've been a little preoccupied and that is why I haven't, but lets be honest, unfortunately it seems that I just haven't made this quite a priority yet. I think about posting all of the time, but just don't seem to get it done, but I am going to try better. LOL

The New Hair



Right before I left for Mississippi, I had decided that I needed a new Hairstyle. I told the Stylist what Hair cut I wanted and Said that I would like to have red highlights. I have enjoyed this style for the last week, and I am glad I got it done. I was ready for a change.

I Went to see my cousin Shanna and her Family in Mississippi

Ok... Or I was informed the locals pronounce it Missippi. LOCheck SpellingL. It was a wonderful visit. I finished watching the Cardinals game in the "BARN". It was awesome!!! A friend of Shane's has built the barn, which is basically a man's heaven place. We watched the game on a 90inch Screen. Not too mention the cool set up with soda machine and everything.

Then Shane and Shanna got me hooked on a new series. Not that I needed a new one. Ha ha, but it was good. Shane watched cute little Brody, while Shanna and I got to play on Monday. We went to lunch and did the shopping round, and we had a great time.

I loved the opportunity to hang out with them!! I just got home, and I miss them already. If only I was independently wealthy and could travel whenever I wanted. LOL
