Recipes

Some of you have asked for a couple of recipes, so I have posted a couple of them here, if you have any questions just call or e-mail me.

Broccoli Chicken Divan

1 lb. Chopped Fresh Broccoli 1/3 cup Soy Milk
1 ½ cups Cubed, Cooked Chicken ½ cup Shredded Cheddar Cheese
1 (10.75oz) Can Cream of Broccoli Soup
2 Tab. Dried Bread Crumbs Your Favorite Seasonings

Directions:

Preheat oven to 450º. Place the broccoli in a saucepan with enough water to cover. Bring to a boil, and cook 5 min. Place the cooked broccoli in a 9inch pie plate. Top with the chicken. In a bowl, mix the soup, seasonings and milk, and pour over the chicken. Sprinkle with cheese. Sprinkle bread crumbs over cheese. Bake for 15 min.

Makes 6 servings. 186 calories, 9.5g fat, 10g carbs, 15.7g protein.


Angel’s Pasta

8oz Angel Hair Wheat Pasta 1 Tab. Crushed Garlic
1 Tab. Olive Oil 2 Zucchini, Sliced
2 Tomatoes, Chopped 4 oz Shredded Mozzarella Cheese
Your Favorite Seasonings

Directions:

Cook pasta as normal. In a skillet, heat oil and sauté garlic until golden brown. Stir in Zucchini, and seasonings. Saute 3 minutes, then mix in tomato and cook a few minutes more. Combine pasta and vegetables and top with cheese.

Makes 6 servings. 201 Calories, 6.6g fat, 26.9 carbs, 10.1g protein.


Spinach Chicken Parmesan

1/3 cup Grated Parmesan Cheese 1 Tab. Wheat Flour
¼ tea. Italian Seasoning ½ cup Soy Milk
1 Tab. Butter 3 Boneless, Skinless Chicken Breasts
1 Tab. Chopped Pimentos ½ (10oz) Frozen, Chopped, Thawed Spinach
Your Favorite Seasonings

Directions:

Preheat oven to 350º. In a bowl combine cheese and seasonings. Roll chicken pieces in cheese mixture to coat lightly. Set remaining cheese mixture aside. Arrange coated chicken pieces in an 8X8X2 inch baking dish. In a small saucepan, melt butter, stir in flour and milk. Simmer, stirring, until bubbly. Stir in drained spinach and pimiento and mix together. Spoon spinach mixture over chicken and sprinkle with remaining cheese mixture. Bake uncovered for 35 minutes.

Makes 6 servings. 127 Calories, 4.5g Fat, 3.6g Carbs, 17.6g Protein.


Nadine’s Fajitas

1 Zucchini, Sliced 1 Summer Squash, Sliced
1 cup Sliced Mushrooms 2 Chicken Breasts, Sliced
½ Bell Pepper, Sliced 1 tea. Garlic
2 oz Diced Green Chilies Your Favorite Seasonings
Wheat Tortilla Fat Free Sour Cream (Optional)
1 Tab. Olive Oil 1 Tomato, Diced.

Directions: In a skillet, add olive oil and cook Chicken, add in garlic, seasonings, and vegetables except tomato. Add green chilies and cook until vegetables are tender. Put into wheat tortilla, top with sour cream and tomatoes.

Somebunny Loves You

When I went and visited Shanna in January, she talked me into signing up for a class called "A year in cards". This has been a fun class. The project that we just did had us focusing on using ribbon with our card. Here is mine. I had a lot of fun with it.

Changes, Changes, Changes.

So, I have always been a little psycho, and I have been the type that just always goes, goes, goes. Fortunately or unfortunately it usually is work or school that I am continually pushing myself to complete, and the things that I want to do have to come in last.

So about three weeks ago, I made the decision to start doing things that I enjoy, I'm 34, it is about time. So I have decided not to go to X-Ray school. I have decided to start hiking more, so if anyone wants to join me on the hiking thing, just let me know; I love having company. I have decided I'm going to start taking time to do my fun projects that I have just kept building up. And many more things.

It is amazing how much of a happier person I am, not that I was unhappy before, but it is a little liberating to do things that I am enjoying doing, and not things that I feel I have to do.

Girl's Day

OK, these pictures are just a little late, but a couple weeks ago, Rachel, Manda, Tami, Lucy and I went out for a girls day. We all went and relaxed and got pedicures. And then we went to Abuelo’s for lunch. Yummm. We had a ton of fun. I love “girls days”



Tami's New Hair Style

So here are a couple pictures of Tami’s cute haircut that she got. Isn’t it adorable? I was holding Zane when Tami went and got it cut, and he was so cute watching all of her hair falling on the ground. When I said, Zane where’s mommy’s hair, he was so cute and just pointed to the floor with big eyes!
